Why I Love This Tea
I am eager to share this recipe with you. It’s one I’m going to make at least weekly. I may need to get more mint and lemon balm planted to keep up with the demand 🥤. There’s something special about harvesting fresh herbs and turning them into a refreshing drink.
How I Made It
I made a small batch of sun tea using lemon balm and peppermint from my home garden. I used a quart-sized jar, filtered water, and freshly picked herbs. After crushing the leaves, I let the mixture steep in the sun for several hours to draw out the delicate flavors.
The result? A beautifully subtle, calming tea that I enhanced with honey, ice, and even a few freeze-dried cucumber slices for a fresh twist.
This isn’t so much a strict recipe as it is a simple method. You only need herbs, water, sunshine, and curiosity. It’s an easy way to enjoy the garden in your glass.
What You’ll Need
- 1 cup lemon balm (loosely packed)
- 1/4–3/4 cup peppermint leaves
- 4 cups filtered water (room temp if possible)
- Let it brew in the sun for 2–4 hours, depending on the temperature and sunshine where you are.
